I made these coconut cupcakes with buttercream frosting with roasted large flake specialty coconut chips. They were really moist! The chocolate cupcakes with the peppermint buttercream and the dark chocolate printed mint leaves topping was also a bit hit. Those chocolate leaves took a really long time to make! Enjoy.
